Gluten Free

**I've had 10+ years of wheat and gluten-free cooking, as well as modifying our diet to accommodate no corn, potato, tomato, and several other food allergies.



Snickerdoodles:

1 Cup Almond Flour (I process the Almonds in a food processor)
1 3/4 Cups Coconut Flour
1/2 Tsp salt
1 Tsp baking soda
1 Tsp Cream of Tartar
1 Cup Butter OR Grapeseed Oil
1 1/2 Cups pureed Dates
2 Large Eggs
1 Tsp Pure Vanilla Extract
1 Tblsp Apple Cider Vinegar
Cinnamon and Ground Cloves to taste
Start with 1/2 cup of water, and mix it in a mixer.  You may need to add more water, you want it soft, but not runny.

In preheated oven, at 400 degrees drop a tablespoon full on a parchment covered cookie sheet.  Bake for 6-8 minutes.  Cool a few minutes before removing from sheet.  Can be frozen, or stored in an airtight container.

Enjoy!!  Great for those who want to avoid sugar.




Ginger Boys

1 Cup Shortening
1 Cup Brown Sugar
1 Egg
1 Cup Molasses
2 Tblsp Apple Cider Vinegar
2 1/2 Cups Sorghum Flour
2 1/2 Cups White Rice Flour
1 1/2 tsp Baking Soda
1 tsp Salt
1 tsp Guar Gum
3 tsp Ginger
1 tsp Cinnamon
1 tsp Nutmeg

Thoroughly cream wet ingredients together.  Blend together dry then add to wet.  Wrap in plastic wrap and Chill 3 hours or overnight.  Roll Dough into 1/8th thickness, cut whatever fun shapes you want.  Leave 1 inch between batter.  Bake on a greased cookie sheet in a preheated oven at 375 degrees for 5-6 minutes.  Let cool before removing from pan.

Store in freezer, or fridge for up to a week.



Sugar Cookies

1 Cup Shortening
1 1/2 Cups Sugar
2 Eggs
1 tsp Pure Vanilla
2 Cups Sorghum Flour
2 Cups White Rice Flour
2 tsp Baking Soda
1 tsp Guar Gum
1 Tsp Salt
1 Tsp Nutmeg

On Parchment paper, bake in cookie tray for 8 minutes in an oven preheated to 375 degrees.  Let cool before removing from tray.  Will look a bit uncooked in the center.  You can roll into balls and flatten with fingers to get a 'pretty' shape.  Batter should be moist, but easy to handle.  If sticky, add a bit more flour.


*You can also drizzle chocolate over top of them for a different look.

You can not lose with chocolate.
